That one dish showed me that, you know, flavors are, if you put too many of them together, you mask them and they dont stand out.
And I asked him, “Well why didn't you put wine in that dish?
” And he said, “I don't want to taste wine I want to taste asparagus.
” - When I was first tapped to work for Mike in Seattle, I said, “You want me to work for The Pasta Whisperer?
” So just about anything he makes is a favorite of mine.
When the opportunity came to take over these buildings and have our own little place out here...
It was it was an easy answer for me.
- I just, I love pasta.
We only have 18 seats or so, and plus this table.
It is not a stuffy, fancy restaurant.
It's a bar.
I also just love Italian dining in general.
It's always a family affair.
It's about community and sharing meals with people and laughter at the table and having a good time and truly enjoying life.
